Meet Our New Fromager (Cheese Wiz), Tenaya Darlington
Noted local cheese explorer joins the Tria team.
We are excited to introduce to you our new fromager, Tenaya Darlington. Tenaya is a leading voice in Philly’s curd world and is a noted writer.
In 2009, Tenaya Darlington launched a blog devoted entirely to cheese, called Madame Fromage. She ate her way through the Di Bruno Bros. cheese counter, chronicling over 300 hunks, and ended up writing a book in collaboration with the store’s cheesemongers, Di Bruno Bros. House of Cheese in 2013. This is the book that Tria gives both to our staff upon completing introductory training, and to our guests when they earn a prize in our loyalty club.
Since then, she has co-written a trilogy of cocktail-centric books in partnership with her spirits-loving brother, André. The two appeared on Turner Classic Movies (TCM) as food and drink hosts after completing TCM’s Movie Night Menus (Running Press, 2016). When she’s not writing, Tenaya teaches at Saint Joseph’s University and leads food tours to dairy-centric destinations with Cheese Journeys, a travel company devoted to exploring artisan foods. This spring, she will embark on a Gouda Getaway to Holland and a Cheddar Odyssey to England, returning with special provisions for the menu at Tria.
Tenaya loves helping cheese lovers find the hunks of their dreams. Her current cheese crush is Rollright, a Reblochon-style funk bomb from King Stone Dairy in Oxfordshire.
Tenaya is in charge of curating Tria’s cheese menus, ensuring that you receive your cheeses in the best possible condition, and training our staff on all things cheese. Stay tuned also for some of Tenaya’s writing in our blog and opportunities to meet and learn from Tenaya at our Tria locations.
